The fine folk at Little Faith are hosting a launch event for our brand new sour beer ‘Yuzu & Lychee Cream Sour’.

It’s going to be a great night with fine beers, a DJ and a host of food traders to keep you quenched, entertained and fed.

THE BEER – balancing floral notes from lychee, tart citrus from yuzu, and a subtle sweetness from the addition of lactose. This zippy sour beer is fermented with Kveik yeast and our house lactobacillus blend for a unique and balanced flavour.

Brick x Elusive Tap Takeover + Beer Launch @ The Shirker’s Rest

Our collaboration brew with Elusive came about from our two head brewers, Josh & Andy, bumping into each other at The Shirker’s Rest and having a bit of a catch-up. So, it only felt right to host a launch night and tap takeover there, at one of New Cross’ best pubs!

We’ll be sharing the lines at The Shirker’s with Elusive and you can be amongst the first to taste our collab – ‘8-Bit Of A Catch-Up’

The World Cup @ Brick Taproom

 

The Football World Cup is fast approaching and we’ll be showing a majority of the games at our Peckham Taproom. We’ll be taking bookings for all England games, which will be shown on the big screens inside at the Taproom. We’re also taking bookings for the Quarter Finals, Semi Finals and THE Final.

NOTE: If England make it to the final 16, we’ll also show this match on the 3rd/4th December and open up bookings nearer the time.

All other World Cup games that are on during regular taproom opening hours will also be on the screens, but we will have the sound off and won’t be taking bookings for them.

Outside at the Taproom will be business as usual with music playing, Mikos Gyros serving and the heaters blaring.

We are recruiting a Sales Executive to join the team here in South London, at Brick.

The role involves representing Brick Brewery in a defined London territory. A large focus will be placed on the On & Off Trade. Your key responsibility is to focus on managing our existing account base whilst securing new business growth.  This is a really exciting time to be joining the team as we take receipt of a brand new brewhouse, with significant growth opportunities.

Key Responsibilities:

  • Manage and maximise existing On & Off Trade accounts.
  • Prospecting potential new accounts by identifying growth opportunities and leads.
  • Strategically working towards various business sales goals.
  • Managing pouring agreements and draught beer installations.
  • Supporting our accounts through events, sales promotions, beer launches.
  • At all times be an ambassador for the brewery.

The ideal candidate will have:

  • At least 1 years proven sales & account management experience. Preferably in London and/or with a brewery, although we will consider those with previous beer related roles outside of sales or other sales roles outside of beer.
  • Proven new business success, account growth & lead generation/out of the box thinking.
  • Ability to plan for and achieve ambitious sales targets.
  • Highly organised & self-motivated, with excellent negotiation & communication skills.

What even is a Thiolised IPA?

We’re thrilled to have collaborated with Brook House Hops on an English-hopped, thiolised IPA that we will be releasing mid-August.

It’s one of the first commercial beers in the UK to use brand new yeast ‘Hop Unlock’ – a thiolised yeast strain from WHC Labs which enables access to previously unattainable thiols.

 

 

But what is a thiol, anyway?

Thiols are flavour/aroma compounds that are found naturally in differing types of hops and malts, in varying quantities. Think white grape, lychee, melon, mango, passionfruit…
They’ve always been there, but as a lot of these compounds are ‘bound’ we haven’t experienced much of the effect of them in the flavour of the finished product. This new ‘Hop Unlock’ yeast contains an over-expressed enzyme which can ‘free’ thiols, thus unlocking a more powerful aroma including notes of mango, guava, passion-fruit and white wine.


How did we end up with this yeast?

Our Head brewer, Tom, bloomin’ loves yeast, fermentation and all things related (as you’d expect), so he’d heard about thiolised beers popping up in the US through a podcast and asked WHC Labs if they were working on something similar. It just so happened they were, and they sent us some ahead of its commercial release. (NOTE: Hop Unlock is now available commercially) We have a long-standing relationship with WHC Labs as they’re our main lab and they store our house lactobacillus culture that we use to give all of our sour beers that distinct ‘Brick’ taste.



Why is it exciting?

  • This is one of the first brews to use the yeast in the UK. (and our first time using it, obviously)
  • Forefront of the future of yeast and brewing methods.
  • Environmental reasons
    • The theory is that we will be able to use UK hops in the same way we currently use American hops, as we can now access these bonus, previously-hidden flavour compounds. If so, we wouldn’t need to import as many hops, and we could achieve brilliant results with local, sustainable, UK hops.
  • Flavours! Aromas! White grape, lychee, mango, passion fruit flavours. Thiols are often desirable in Sauvignon Blanc production.


How have they made it?

In the US, you’re allowed to genetically modify yeast, whereas over here you can’t, so Hop Unlock was made by ‘forced selective breeding’ favourable components from previous yeast strains, and then cultivating them over time.

What changes did we make during the brew to optimise the yeast’s effects?

  • Use of hops with high amounts of bound thiols, including some UK varieties:
    • UK Challenger, UK Chinook, Cascade Leaf, Idaho 7 Cryo, Riwaka T90, Eclipse T90
  • 4 step hopping process to optimise the benefits of the yeast strain and access as much flavour as possible.
    • Mash hopping – thiol precursors are found in malt, adding hops in the mash allows extraction of bound thiols.
    • Whirlpool hopping with hops that have high levels of bound thiols.
    • Declaration hopping – hopped as the beer is transferred and cooled from the kettle to the fermenter. Its purpose is to preserve heat-sensitive aromas that would otherwise be boiled off.
    • Dry Hopping with even more thiol-forward varieties.


Brook House Hops

This beer is a collaboration with Brook House Hops, a well-respected UK hop-grower based in Herefordshire. They also import hops, but they put a big focus on their own UK hops. They kindly provided some of our hops for the brew, including the UK varieties of Chinook & Challenger.



Thiolised IPA V.1 will be available in 440ml cans & kegs mid-August.

Job Role: Head Brewer

Brick is an independently run brewery that started from humble roots in a Peckham shed. Since 2013 we have been building our brewery; first from a railway arch in Peckham Rye, SE London and after an expansion in 2017, now with a production site just down the road in Deptford. We are looking for a passionate, organised and driven Head Brewer to manage our brewery production and lead our brewing team.

The Head Brewer will be critical in the efficient running of the brewery, from leading the team, the delivery of our core products plus developing new products, including our well established sour range, seasonal beers and collaborations.  This is a brilliant opportunity to join this independent, family run business and help us continue in our expansion plans.

Key Deliverables

  • Developing, motivating and managing the production team, performing regular reviews and encouraging vocational training
  • Production scheduling to ensure the delivery of product on time and in line with agreed costs
  • Develop and oversee implementation of processes relating to wort production, cellaring and packaging
  • Work with the directors to create and manage plans to increase annual output in line with agreed sales forecasts whilst working on efficiencies
  • Responsible for ensuring compliance with relevant industry legislation and food quality/safety standards, including SALSA
  • Maintain record keeping and quality control to a high standard
  • Manage the delivery of an innovative range of specials to a pre-agreed calendar and to appropriate costings
  • Negotiation of raw material contracts and ordering of raw materials necessary to fulfil schedule
  • Work with the sales team and operations to ensure availability and delivery of core products
  • Manage quality and quality processes to maintain our excellent standard of product
  • Oversee and take ultimate responsibility for upkeep and improvements to beer quality. Continuously research new methods, processes and materials to improve quality and deliver progressive products
  • Take the lead in acquiring and implementing new equipment to improve quality and efficiencies
  • Manage the maintenance of all brewing equipment to ensure it is fully functional at all times
  • Represent Brick at selected industry events as a brand ambassador
  • Work with Marketing on initiatives for social engagement
  • Foster relationships with other breweries and artisanal producers

 

Who we are looking for:

  • 5+ years experience in brewing
  • Previous experience in managing a team
  • Ideally a relevant technical degree (e.g. engineering, brewing)
  • IBD Diploma in Brewing, Master Brewer qualification or similar (desirable)
  • Proficient MS Office skills – Excel, Word
  • Analytical capabilities
  • Fantastic communication skills

Sour Series – Artist Spotlight – Em Hyett – Mango Daiquiri Sour

Since the first time the lactobacillus hit the tank and we began developing our house culture in August 2017, our sour beers have taken on a life and identity of their own, and now form a huge part of what we do at Brick. A piece of that identity is down to the geometric and colourful artwork that we use for our labels, and the local artists who create them.

Previous Sour Series Designs

Working with different creatives, often freelance and/or graduates of our surrounding Universities (Camberwell College of Arts, London College of Communication and Goldsmiths University), has allowed our labels to be a canvas for showcasing their individual artistic style. The ingredients, flavours, colours and inspiration of the beers influence the final designs and we love seeing how each individual interprets our briefs.


Em Hyett – Mango Daiquiri Sour

Em Hyett is one such artist who recently worked with us to create the artwork for Daiquiri Dreaming – our Mango Daiquiri Sour collab with Clapton Craft. The end-result was playful, colourful and evoked the tropical flavours found inside the can. We asked Em to tell us a little bit about her process and she had the following to say…

Insights into the process –

Often with collaborations the client has an idea in mind, so the first step is to workshop a bit to understand the kind of design they’re looking for as well as any constraints.

With this one, Clapton Craft wanted a geometric repeating pattern to match Brick’s other sours but with the Brick Brewery labelling over the top (to match the usual style for collaboration brews). I wanted to subtly pull out some of the different shapes associated with the flavour (daiquiri glass and mango) as well as the fun of the Clapton bear logo.

You’ll see in my work that the fun use of colour is really important to me and so I play around with different bright palettes once a rough design idea has been agreed. For the Mango Daiquiri Sour I settled on summery pastels to bring out the fresh tropical flavours of the beer.

Bit about myself – 

 

I’m a South East London based artist with a background in Astrophysics… Over the lockdown I turned to painting some of my favourite spots around South London as I’d never properly appreciated the community spaces that we all ended up doing endless walks round!
